Day 3 on this egg fast, decided to mix things up a little today, I thought I would manage on scrambled egg alone but getting decidedly bored of it. Today made fresh mayonnaise which tastes so good compared to store brought mayo, boiled some eggs for egg salad, got recipes for cloud bread and egg fast lemon bars :D weight is dropping so may well continue with this egg fast beyond day 5

Mayo Recipe as follows

2 room temperature egg yolks
1 tbsp fresh squeezed lemon juice
A good pinch of sea salt
Dash of ACV (Apple cider vinegar)
A Tsp of English mustard (this was already mixed as I didn't have any mustard powder)
1 1/2 - 2 cups of olive oil ( do not use extra virgin as it makes for a very bitter mayo)

Put egg yolks, lemon juice, mustard, vinegar and salt into a bowl or blender and whisk until emulsified and the egg yolk is pale in color, very very slowly start adding your oil whilst mixing well, continue slowly until oil is added and the consistency of your mayo is nice and thick, check seasoning and adjust if necessary, store in an air tight tub and refrigerate for up to several weeks.
