I haven't recorded what I've eaten and I'm so tired from end of the school year work, kids not sleeping etc. That sticking to a diet has been pushed farther down my list. My lunch breaks have remained much too busy and I haven't walked on my lunch break in well over a week. I step on the scale and I'm like okay it is down .2 pounds or .4 pounds and I think okay just keep going. If I had been gaining I think it would have been different.

I have still been reducing carbs and watching portions. For example last night we had bunless burgers with homemade sweet potato fries. You can't over eat on Fries when you only make 1 sweet potato's worth and there are 2 adults and 2 kids. We pan fri in coconut oil, strain them and sprinkle with cinnamon and they are so good. A bunless burger without ketchup cuts out so many needless carbs. Add cinnamon.

Today I'm back at it and hardcore too. Breakfast 1/2 veggie and sausage omelet. Lunch is Thai Coconut Lime Broth. Snack is a banana, and Dinner is a Spinach salmon salad. Tomorrow will be a kefir and mix berry smoothy for breakfast. For lunch I'm having Salmon Salad again. Then dinner has carbs. We are having friends over for dinner and they like my lasagna so that is the plan. I will make it with gluten free noodles. However, even still I will have to highly watch my portion control. And I'm making A salad with romain, olives, onions, tomatoes with a drizzle of olive oil so I will have eat mostly that.

The lasagna has me worried, but if I do a healthier organic, gluten free version and watch my portions I should be okay.

I told my husband I would try not to gain more than 1 pound over Easter and I did just that. I gained just under a pound. I make crescents from scratch, and all of our favorites and I had satisfying portions of all. But all of the deviled eggs, cocktails, do add up. Today is my first day back to reality.

I had steal cut oatmeal for Breakfast with blueberries. For lunch I'm having my favorite Salmon/Feta/Spinach salad. We still have left overs from hosting Easter so left overs are on the menu for the day. However, I am back to walking so there you have it. My big big but not completely unrealistic goal is go get down to 199 by June 1st. It will take hard work and dedication. I really want that. That is 5.5 weeks to lose 16 pounds. That is about 2.9 pounds per week.

I know it is crazy. I know it, but I really really want it. With hard work and dedication maybe, just maybe I can get there. The big thing is I have a dress I bought for a wedding three years ago at 205 and it was a bit tight, but I had just had a baby and thought I would lose it, but instead my thyroid was off and I gained and then I was pregnant and now I'm here. I want to wear it to a wedding on June 22nd and while I can squeeze in at 205 I would rather look fabulous and be more like 190/195. So really I want to fit in that Dress by June 22nd, and that will take a great amount of effort and I need to start now because that is 2.84 pounds per week to get to the 190.
