I made low-carb cauliflower "potato" salad for dinner this evening, to go with grilled bourbon salmon. The salad turned out to be AMAZING! I mean, it's FILLING and tastes FATTENING -- 1.5 servings with only 4g net cards. I'm holding the line at an average of less than 10g today and tomorrow to compensate for the pig-out this week.
215.0 lb Lost so far: 70.0 lb.    Still to go: 47.0 lb.    Diet followed 100%.

sounds good I saw a recipe the other day on cauliflower potatoe salad, you should post the recipe. sounds like a winner

I looked for the recipe and see you have to cook the cauliflower. Some recipes seemed like the cooking time was too long. So then the cauliflower would be too mushy. So how long did you cook it?

I love cauliflower potato salad and so does my husband! This evening I just ate cauliflower with butter, like mashed potatoes. That is good too, but next time I'll add some dill and onion flakes.

Sounds great. Tonight I made sliced zucchini dredged in egg mixture and use pureed pork rhines for the breading..baked it. Pretty good. Also did the same with pork chops and pork rinds. I stay under 20 carbs a day.
