izzypup68's Journal, 23 February 2015

I feel like I am just chugging along. I certainly have temptations, but I have been doing pretty well with those. I allow myself a nibble instead of a ton. :) I have been able to reduce my sugar intake a LOT.

As I look at this process of changing my lifestyle so I not only lose the extra weight, but adopt good habits along the way to maintain healthy eating from here on, I can see plenty of room for improvement. My next focus is going to be incorporating more fruits and veggies into my diet. I need to eat more plants. I am hoping to grow accustomed to reaching for an apple rather than a cookie or some carrots and hummus rather than a bag of chips.

Any suggestions for tasty, handy fruit/veggie snacks?

I just completed roasting curry cauliflower, garlic asparagus and kabocha squash "fries'. This has helped me sooooo much. I get the same savory salty like chips but with the benefit of vegetables. I divide the roasted veggies into small portions and reach for these rather than chips. They really are good to me. I love them. I've even substituted them for snacks during football games and folks eat them right up! Just search the internet for roasted vegetables and pick a day you have an hour or two to roast. Good luck. Hope it helps.

Well, I have gotten off on the right foot today. For lunch, I had a veggie omelet with cauliflower and spinach. (Glen, I too am trying to have a better relationship with spinach. :) ). I shopped for some fruits and vegetables. I have already prepped the stir fry for dinner.

Izzypup, I see you like stir fry, instead of spinach that too me gets slimy when cooked, try kale in your dish, it's firm and has crunch even when stir fried, you can lightly spray it with oil and dress lightly with salt and place on cookie sheet in 250 degree oven for 5-6 minutes and it tastes just like potato chips plus it has 3 grams of protein in 1 cup!
