on the horns of a dilemma. One of the truly carb filled things I like is polenta cakes with caramelized onions, honey and goat cheese. I only make it 3-4 times a year because I could finish an entire recipe of it. Looked up the carbs and it's 14. Ugh. Sugars aren't bad due to the honey being a drizzle, 178 calories so good there tho it doubles my dinner calories, few crumbs of cheese. Won't put me over days calories. I'm waffling about it tho. help?
186.3 lb Lost so far: 7.8 lb.    Still to go: 56.3 lb.    Diet followed reasonably well.

“Only 3-4 times a year” seems to me to qualify as a “Special Occasion”. So I would enjoy myself in your place. Not sure about the entire recipe, though.

Mac_Rose basic polenta recipe cup each-milk, water, cornmeal. Prepare a cookie sheet, with sides, with parchment paper lightly coated with Pam. Pour cooked polenta and spread quickly. Let cool. Cut into squares, put squares onto parchment paper covered cookie sheet not touching bake until lightly brown on bottom, flip. Put a square on plate, top with-forkful of caramelized onions, crumbled goat cheese and a light drizzle of honey. Totally delicious and I could eat the entire pan.
