Addie Aline's Journal, 06 January 2016

Had a rough day yesterday, I'm still not on plan as well as I want to be. I got out of the habit of cooking while my sight was so bad. I have a gas stove & gas burners & bad vision don't go well together, anyway I'm trying to get back to it but I'm still getting things from the freezer that I cooked before & I should wait awhile to have them.

I'm doing a LC meatloaf in the crockpot today. I haven't made it before so I hope it's good because it will give me left overs to have. I like to get more than one meal from a dish as I'm not crazy about cooking. My DH makes it too easy for me not to cook because he likes to cook but too much of what he does I shouldn't have.

Here's hoping for a better day today with a little more planning. It was sure easier when I could throw a salad together with some protein on top but I've developed a problem with lettuce types so it makes it a whole new ball game. It's odd that cooked spinach doesn't bother me but raw does.

I got out of the habit of cooking too (laziness, not physical problems) but unless you can afford a personal chef, I believe preparing our own meals will bring the best results. Happy Cooking!

My husband's stomach can't tolerate raw veggies but cooked he does much better....

Meatloaf sounds like a good idea. I prefer to batch cook, and freeze some for later too. Strangely, hubby and I have been eating together more since I started eating differently to lose weight. His food now is often the same as mine, but with a pile of carbs on the side.

I'm not a big fan of cooking either, it's strange when my kids were home I didn't mind it but u have so much left over thank goodness my DH doesn't mind left overs. Some things just don't freeze well after being prepared.
