Quick and dirty lunch today. Swapped out the chicken breast for an Aidell's chicken something sausage. I think it's apple, but I threw away the label. the avocado was tiny and from a neighbor's tree. not perfect, but good enough for my lunchtime meal. Last of some spaghetti sauce I made which is really just tomatoes and spices. I added some olive oil to count any hidden fats I happened to forget. Happy Monday.

cheap does not have to be unhealthy or bad tasting. I did almost a year of variations of brown rice and beans at work when I didn't have much money or access to a fridge at work. I used a little cooler bag and cut my veggies up at my desk. why we had a microwave in the trailer but not a refrigerator is a good question, but not one I was in a position to ask about at that point in time. there was a food truck, but it really wasn't an option since that would have taken a whole hour's pay. buying bulk beans and rice got me out of that job.
