Thought I'd better do some explaining about my weight graph. And no, I haven't had liposuction.

I am allergic to nitrites and over Christmas I ate ham, sausage, etc. So a lot of the weight I've gained (and am losing) is water. Wouldn't it be nice to really lose 3 pounds a day?

Nitrates will do that to one. The wt loss makes one feel amazing though. I love ham and bacon -nitrates are also a common asthma and migraine trigger. Both for me. Nibbled on some yummy ham christmas day. What a treat!!

The same goes for me. I know one doesn't normally lose that much in one day. I never tho't that it might be nitrites or nitrates, but that would explain the massive gains and losses.... But... I'll take the losses in stride and with great thanksgiving.

Hi Buffy...I have cut back on salt but every thing you buy has lots of salt in it..its no wonder we can't get rid of the fluid...I do drink lots of water...but only after my coffee...LOL...

Even though it might must be water weight, the scale does look good with lower numbers.

What goes up ... must come down. (Speaking of fluid weight). According to the geeks, it takes a week to get rid of excess fluid build up after eating too many carbs. Who knew?

I figure any loss is a good loss. I've never heard of the nitrates issue before - very interesting.

Mom - Good news because, along with the foods containing nitrates, I ate all of the white, refined crap you could ever imagine! Maybe I'll have a few more days of weight loss?

*gasps* No, no ... not the white stuff!!! LOL! (I ate my DH's homemade sausage rolls (he uses puff pastry) and pecan pie, crust and all!) I cannot turn down anything like that. Oh... and Cheesecake Factory Cheesecake with the graham cracker crust. I didn't even try to make low carb. I bet I was worse than you! :\

Lynn - they are used as a preservative in deli meats, bacon, sausage, ham - almost anything not fresh. So hard not to eat them.

Whole Foods sells Wellshire Organic dry rubbed uncured pork bacon that has no nitrates or nitrates added. I've been eating it for about a year and love it. When we went to a restaurant recently for breakfast and I ordered conventional bacon it tasted so inferior to me. It is expensive but I only eat 2 slices a day so it is about $1.50 for 2 slices but one of my healthy pleasures. Happy New Year!

Oscar Meyer also sells the nitrate free bacon in Walmart grocery. We don't have a Whole Foods store or Trader Joes. *sigh*
