So, this is lunch... I hate estimating. I had 1/3rd of this. Greek Style eggplant. What is in it? Olive oil carrots eggplant beans ( my addition, not in the recipe ) mushrooms ( my addition, not in the recipe ) diced tomatoes roasted peppers vegetable broth I ate about 2 cups of it. I can't believe I ate eggplant. I don't like eggplant, but I have t do what I have to do.... I am looking forward to my one meal a week where I eat meat, for sure! :)
