Thanks, Melissa! I was tired from a long day so wanted something simple & easy to prepare tonight. The salad is a bagged salad from Costco (one of our favorites) & the soup is Costco as well...just added a couple of things.

Carol, I'm not sure how to describe kale. This salad mix is actually a combo of broccoli stalk, green cabbage, brussels sprouts, Kale & chicory. It comes with dried cranberries & pumpkin seeds to sprinkle on top. It has been a favorite for Hubby & I since we first tried it. This one is made by Eat Smart, but I have seen other brands that make a similar one.
I do stay safe. Thanks. Hand sanitizer, distancing, masks, etc.....all in play when we go out.
