Katsolo's Journal, 15 June 2020

An overcast Monday salad. Cold pork tenderloin with a mustardy hummus, spinach with vinegar and oil and some baby tomatoes and feta. I wish I'd had soft mozzarella and basil, but I would have eaten far more mozzarella than feta if I had. Not complaining about the clouds, I'm lucky to be close enough to the coast where it keeps things cool. My friend in the desert is already in the low 100's before noon during the summer.

You need to try it. I love pretty much any meat over salad. It's just yummy. And you know that all got mixed together as I went.

Just homemade hummus with more yellow mustard powder in it to take it a different direction. It doesn’t have the vinegar/wine you have in some commercial mustard (sauces) so it tastes a little different.

It sounds yummy! I love mustard. You’re inspiring me to start making my own hummus again! But I am Sabra’s biggest fan.

You can always add to Sabra’s plain. Except i don’t think you can go sweet because they have garlic and onion in it.

That’s true! I will have to try! Thanks, Kat! Btw, I used to work with a Katerina at my previous job and always called her Kit Kat. I have to hold back from calling you Kit Kat too out of habit. 😬
