I don’t know who comes up with serving sizes and recipes but 1 1/2# of chicken does not serve 8 people.
We went to dinner at the in-laws tonight and she made 1 1/2# of chicken for 7 of us. That came out to half a small chicken breast each. I consider myself a small eater and I had about half as much as I would normally take (3/4-1 chicken breast is the norm for me). How could you ever get your real protein requirements by eating half a chicken breast? The flat kind not the huge plump ones.
I ate half a flat chicken breast, 2 ears of corn and probably a cup of broccoli and cauliflower. I had a piece of depression cake for dessert. I’ll have to eat again soon or I’ll be too hungry to sleep.
