Well, I made some great strides of improvement today. At the suggestion of @Erikahollister, I made a concerted effort to up my Dietary Fiber. My highest so far this week had been 6.2 grams of fiber. Today, I got in SIXTEEN grams!
And, thanks to @Judyrose1977, I got a great recipe which she called “All Seed Crackers.” I didn’t have the exact ingredients on hand, so I had to improvise, and the result was AMAZING! I really miss bread and crackers as a “delivery system” for other foods.
My modified recipe, which I am calling “NO-GRAIN 'Whole Grain' CRACKERS” yields 36 crunchy, firm crackers that can be used for ANYTHING you would use a “normal” cracker for! (CAUTION: Don’t eat six of them at a time, as I did -- Without giving TMI, my bathroom was about 7’ too far away for me to make it after I ate them!) Here’s the Nutrition Info for one cracker: Calories=47; Fat=3.9g; Total Carbs=1.72g; Dietary Fiber=0.93; NET Carbs=0.79; Protein=1.8g. So, for the SIX crackers I ate, it was only 4.72 NET CARBS!
I also had SIX of my Pecan Cream Cheese Pancakes and SIX slices of bacon for only 6.38 Net Carbs! This is starting to get fun. Here’s a couple pix. (Note, I ate 2 more pancakes and 2 more slices of bacon after I took that pic, because I COULD without going over my counts for the day!)
