Sweet potatoes are a favorite, lots of nutrition. Not great for low carb though. Sounds amazing!! What a cool place to go to college! Personally, I was going to college in Wisconsin, headed for a bit warmer, at least better than -20, lol. Finished in Boston. Course this year they are a bit buried in snow.

Your body was working pretty hard to keep you warm, so I would say those sweet potatoes were just the thing you needed. They are a lot better than white potatoes .... so don't feel guilty. Glad you and the daughter had such a wonderful day out. I love Hogwarts! :)

WFN: My niece who now lives in New Mexico with her hubby and 2 year old, went to a college in Wisconsin as well (can't remember the name). As for the weather, I am noticing that it is getting very weird. Places that are not typically know for a lot of snow are getting it in spades!

I LOVE sweet potatoes, just baked, no marshmallow goo. Don't feel guilty lots and lots of nutrition. Odd weather pattern as the coast is getting tons of snow. I used to live about 20 miles west of both Boston and NYC, we would get a foot and the city would an inch or 2.

Back a long time ago when I was a kid I'd bake them and everyone, including my family thought I was a bit crazy. I'd beg my mom to buy sweet potatoes and substitute my baked potato with a sweet potato. I never really liked that Sometimes I'll just have a sweet potato for dinner.

Laughing at the gathering here in defense of sweet potatoes. :) I even have a book in my repertoire of cookbooks called "Sweet Potato Power - Smart Carbs, Paleo and Personalized", by Ashley Tudor. The downside is, if you are eating a high fat, low carb diet ... these are not included. That is because you are trying to stay in ketosis. Dang! On the upside, they are highly nutritious and a very good carb to eat when you start adding more of the carbs back into your diet.

Mom, you are so right. Too many carbs for a low carber. Ok for my WOE. A baked sweet potato or 1/2 an acorn squash makes a yummy desert. add a touch of cinnamon and/or fresh grated nutmeg a little butter and YUM

hahahahaha... glad I missed most of the sweet potato talk because I would have been drooling all over again. I was out all day - and it's soooo cold! Will be cold all week. Cancelled flights (more than 200) today - unbelievable.

The snow and the cold doesn't want to quit this your for some of you. We have a winter blast again here in the heartland. 16 degrees when I was out with a strong wind, something like a -15 wind chill, sleet late afternoon and we are supposed get snow overnight. At least ours has bouncing around up and down and not much snow.
