They are beef and egg ‘pies’ I use mince as the base instead of pastry 😊

👍 when would you normally eat them? And how many at a time?

They are great to make ahead of time, I would make a batch and grab some for breakfast on the run or team them with salad or vege for a bigger meal. I’ve just got home from an hour of big weights, they are a great protein boost to suppress hunger quite well

If you are watching your calories, or a leaner version, you could use lean turkey mince or lean ham as the base 😊 one egg splits between 2 bases, add what ever filling you desire, I like to add some mushrooms, rosemary and garlic when i’m using minced lamb 😊

For the full dozen I used 600 grams of mince meat, the leaner options work best for this recipe, simple seasoned salt and pepper or what ever spices you would like, seperate the mince among all 12 muffin bases, 50 grams of mince per cup, press it out to line the base like pastry 6 large eggs I used a diced medium mushroom and a crushed clove or garlic as well as some finely grated Grana Padano, whisk all together Bake the mince cups in 180 degrees Celsius oven for around 10 minutes or until just cooked. Take out of the oven and pour egg mix evenly amongst the mince cups, back in oven for 10-15 minutes or until done. A serving is 2 cups or 3 at a stretch

Minimum macros on basic cups Approximately 20 grams of fat 0.4 grams of carbohydrates and 25 grams of protein About 290 calories all together 😊 For 2 mince egg cups
