Anyone else out there experiencing carbohydrate sensitivity? Let me explain...
A few weeks ago I started experiencing heart palpitations after eating anything highly concentrated in carbohydrates. At first I thought it was limited to wheat and rice, but it turns out I can't have tapioca flour or processed sugar either. I can bake with almond flour and eat small amounts of potatoes, but essentially I've been having to stick to fats, animal proteins, veggies, and fruits. The weight is slowly coming off, about 1.2 lbs. per week, since I'm still getting plant-based carbohydrates that aren't heavy in starch.
