I had the remnants of a Costco chicken in the fridge. I pulled most of the meat off of the bone and shredded it. Then added some celery, carrots and Compari tomatoes to a pot of chicken broth with the chicken carcass and simmered it for an hour or so. I removed all the bones and added in the shredded chicken with some parsley and fresh herbs. A one inch slice of Balthazar French baguette with butter completes this lunch. It turned out quite good.
