Today was another eating day. I spent a lifetime indulging in every carb and sugary treat I could get my hands on, had a hard time driving past any McDonald's and melted into all possible Venti Lattes with an Oat Bar and Coffee Cake on the side... Sigh... ok, onto the good news with low carb eating and the wonderful internet I am able to find recipes that still keep my comfort side happy, while trying lots of low carb/healthy alternatives, I may not have in the past.

Tonight was a recipe by Carrie Brown, Montana Hash, but instead of potatoes, cauliflower. Like I said previously, I'm no chef, and love the idea of a one pot meal. As you can see from the groceries, this is a pretty solid, simple and nutritious low carb meal. It was super yummy.

I substituted green peppers with yellow, beef stock with chicken, tomato paste with sauce.

Great you worked it out. Some days are harder than others. I like simple meals with real ingredients best
