I'm not much of a rice person, so it's not much of an issue for me. Rice is just a filler for me, so I use miracle rice when the need arises. I do love mashed cauliflower though, but won't give up my potatoes for it. Huh uh. No way. :)

Cauliflower is the devil. The taste is... fine... sort of, but the texture is just too offputting to allow me to get into it. I just eat the rice and cut way back on how much of it I eat. I love Asian foods, so not having rice at all seems kind of sacrilegious. I have managed to turn some of my favorite meals into lettuce wraps instead, but there's no way I could eat my Bibimbap without rice. Bap means rice after all.
