OOOOOH YUMMM I am making this for thanksgiving! Will go great with the crab, shrimp and mudbugs!
Keto Spanakopita old fashioned.

Yields:12 servings Prep Time:10 mins Cook Time:30 mins Meal Type:Main Dishes

Keto Spanakopita old fashioned.
FROM greekgoesketo.com also calls for goat butter... cant find it.
Ingredients
4tbsp coconut flour
4 tbsp. almond flour
6 tbsps sour cream
2 large egg
1 leek
1 tsp sea salt
3 large egg
6 oz feta cheese
4 tbsps butter
1/3 tbsp nutmeg (ground)
1/2 tbsp black pepper
1/2 tbsp rosemary
4 tbsps olive oil
2 cups spinach (chopped or leaf, frozen)
Directions
For the crust , beat eggs with melted butter and olive oil until you get an emulsion. Add salt, rosemary, and nutmeg. Slowly add in flour (both) The consistency should be between butter and dough.

Grease 9" pie pan with butter and pat crust dough to the sides and edges of the pan. Bake @ 392F or 200C for 10 minutes

Filling beat eggs with sour cream and feta add in greens pepper fill the crust
return pie to oven and reduce heat to 170c or 338f Bake for 20 - 25 min serve warm not hot
