I love this way of eating. I have always liked salads but admit that Pizza, Big Mac Meals and a host of other fast foods diminished the joy of a fresh salad. Without all that crap in me, I can't wait to get home to make my nightly salad. I use lots of different greens - Baby Kale, Baby Spinach, Baby Arugula, Romaine, Spring Mix, Sprouts, Bib/Butter, Iceberg, etc. There are some extra Vegetables for texture - Onions, Peppers, Cucumber, Tomato. I always add some nuts and cheese (Macadamia, Pistachio, Sunflower, Walnut, Pine, Pecan) and (Goat Cheese Crumbles, Blue Cheese Crumbles) mostly for some heft and flavour. Finally I top it off with a NON-CANOLA OIL dressing. Making my own would be ideal, but I enjoy using Primal Kitchens from Whole Foods. It makes me happy to know that I am not loading myself up with heavy Carb-Laden food, like Pasta, when I eat at night, as I work late, and most meals happen at about 8:30pm, and I love knowing I am receiving excellent nutrition, daily.
Back in May I was still doing a Pint of Ben & Jerry's, and my sweet husband would look over and say, "IceCream for dinner" and I would scowl at him with a "Yes Dear!" and we would carry on. That is so crazy? What the hell was I thinking? (And yes, this has been going on for years, off an on, up and down, Yo-Yo...)
I am pretty sure I have figured it out, but am a little nervous to put the cart before the horse, so let's just keep this one day at a time... What are the chances of 241 on the scale tomorrow? Well that remains to be seen. Good night my FS friends. Stay strong!

Here's hoping for the 241! Salad looks lush, but I'm more of a salad-as-a-side-gal. :D

I to love salad, I have it every day but we usually have chicken and bacon with it, or similar. I love nuts but would worry that I’m adding to many carbs to my meal. Do you weigh them? I really like the idea of adding them to salad.
