Cauliflower and onion creamed soup topped with cheddar OMG yum!

Cauliflower Cheddar Soup 1/2 Cup butter, 1/2 Sweet Onion chopped, 1 head Cauliflower chopped, 4 cups herbed chicken stock, 1/2 tsp nutmeg, 1 Cup Heavy Whipping Cream, Sea Salt, black pepper, 1 Cup Cheddar Cheese Sautee onions and Cauliflower in butter in large pot until tender and lightly browned add Chicken stock and nutmeg to pot and bring to a boil lower heat and simmer about 15 minutes until vegetables are very soft Remove from heat and stir in Heavy Cream Puree in Blender until Smooth Serve topped with Cheddar Cheese
