It is a day for lists!!l I need a plan to work from.
I am working on menus and plans for the coming 2 weeks. My frig is kind of a mess =so using up small items in it that need to be used. "Fried rice" for dinner with bits and pieces. Missing bean sprouts as I either have to grow my own or a trip to the oriental store--will do oriental stores on Sat.
onion, ginger, mushrooms, a bit of leftover smoked pork chop, green pepper, chopped cilantro and a few shrimp and a cup of leftover rice. toss in some oyster sauce and soy sauce and a good tasting meal, a few dry roasted peanuts on top for a bit of crunch. I may only eat part of it might be difficult to come up with calories for the day.

Looking forward to an interesting 2023. Hope everyone is looking forward to a better 2023 than 2022. Healthier and meeting goals in your life.
Home from a 3 day weekend @ the cabin. i did not want to come home. Have to be back to work tomorrow. Back to tracking after the holidays and the normal routine . It will be 2 weeks for me to go back to the cabin. I will be able to plan food etc. a bit better. I will be planning to take meals to heat up when I go to the cabin. May have to invest in a small microwave for there. Cooking there is a convection oven /air fryer and a small hot plate.

Some of the many lessons I have learned in this 10 year journey is that much of it is emotional health and the support of family and friends is huge!! It is not a journey that ends it is for life. Your emotional/mental well being is a gigantic factor.

well some dried peppers and my new larger motar and pestle. (I have a small one I use constantly) I am working on learning to cook more authentic Mexican foods--not Tex Mex. Made a pork filling for multiple uses tonight. My house smells amazing.
One of the things I have learned from the last one is the sauces to me taste more incredible the next day.. I also cut the pork too small. So a learning process. I still need to add these to the cookbook so I can figure the calories. The chipolte one I finished on Sunday.
