Because of the dairy issue I recently discovered, no more cheese for me, and will be using almond milk from now on to whiten my teas. I will miss the heavy creams, and butters, and whipped toppings for my jellos. Since getting away from dairy's my weight has begun to go down a little, though I see this as a battle, yet find that almond milk has some pretty decent uses as well. Trying out tofu as a whipped topping these days, and actually its not bad at all, but a little different texture then whipping cream. Its all about adapting, and I will do just fine.

For the last month and a half, I have been following the Atkins lifestyle, and I really do enjoy the great varieties of both meat, dairy, and veg I can have. For whatever reason I seem to be a very stubborn loser. My weight has remained the same since the beginning, and since I have experienced this program years ago when Atkins first arrived on the scene, my weight came off so easy at that time. I would venture to say my metabolism was much more responsive back then, since I was a teen. Now in my fifties, it just seems so tough to even drop a pound. I will continue to be diligent however, and see if progress happens over the next few months.
