It's been 8 weeks since my transition to veganism. It sounds such a long time and I can't even imagine how I've ever eaten meat. You may think it's hypocrisy coming from someone who ate meat most of her life.The truth is I've always wanted to stop eating meat so I first went vegetarian. I thought, like many others, that I wouldn't be able to supply everything that my body needs without eggs and dairy... at least. Now I know that is not true. I was also convinced that I would not be able to do it because of the pressure of my meat-loving family and because of my low self-esteem. Now I feel great for making this transition and I know it's a personal decision that only I could make. Also, my mom noticed that I am more energetic and losing weight and she gave up meat as well...but sticks to dairy, eggs, and fish. For mom, that is a huge step. It is a huge step for anyone but for mom, who is incredibly inflexible, the step is literally huge. She didn't ask me what I ate and why. I guess she just watched me and decided on her own to give up meat. She doesn't call herself vegetarian or anything else. She simply eats healthier.
And my son, who has a great body and enviable metabolism rate, is also eating healthier and contemplating going vegan...except for chicken breast. So I told him it is enough to reduce or eliminate processed foods - since he is only 14- and just embrace a healthy lifestyle. He can make the transition later on in his life and strictly on his own. I've never tried to tell him to go vegan but I think we do influence our kids although I personally never saw myself as a raw model. I didn't even think my teen son even notices what I eat. But now I know that he sees so many other things and that, as a single mom, I need to be careful with my lifestyle. I have embraced celibacy some time ago and it's been going on long enough for him to understand that. He acknowledges the situation and now even asks questions. He sees celibacy as an option at any age, including his. I can always go back to normal life...right? I just see it as a break from the hassles of a relationship. Perhaps love will cure me of celibacy one day. I keep an open mind but for now... I feel better this way.

Saturday 9th I managed to complete 7 weeks of vegan diet. I am becoming increasingly aware of my body's needs. I kind of feel what I need to supplement and what I need to cut down on. I gave up RedBull Sugar Free as well. It is a great accomplishment because I used to drink it not only because it seemed to help me stay focused and alert when tired but also because I liked it. I also noticed that I am very careful about not wasting any parts of the plants I eat. I discovered new flavors, which are amazing. It is remarkable how profoundly plants can change their flavor when not mixed with meat. I finally managed to discover tofu and several ways of cooking it. I can now introduce in my diet in a reasonable quantity and without hating it. It is great when baked with Asian spices and added to sauteed spinach. My secondary goal is to go down to 500 Kcal/day, which will probably mean 600 Kcal/day realistically. My main goal is to eat my last meal by 18:00. It is a challenge because I tend to skip early breakfast. Oh, and I also managed to introduce a multi-grain shortbread that is low in calorie and quite tasty. It is also really expensive but I only eat 2-3 slices (the equivalent of one slice of white wheat bread) per day. It is wonderful with humus or guacamole topped with capers. I love it! Never thought I would. Meat cravings are almost gone! Smells remind me of my meat-eating period more than seeing a roasted dead chicken on the table. I've never eaten meat much anyway.
