One of the most significant changes I've made is also turning out to be the easiest and surprisingly liberating.

I don't fix dinner.

I come from the tradition of dinner being the largest meal of the day. So, for years, I've been coming home and either fixing a meat and potatoes meal or going out to eat and it doesn't make any sense. I get off work at 5:00 and have a 45 minute commute. After the kids activities, we're not sitting down to eat dinner until 7:30-8:00 at night or later. It's crazy to eat a heavy meal that late at night!

Since I stopped fixing a huge meal everynight, I no longer have to hear, "I'm not eating THAT!" or "What's for dinner?"

Instead I provide my family with reasonable alternatives. Grilled cheese with tomato or ham, with or without soup, blt's or omelets, for example.

How many times have I heard, "Eat breakfast like a king, lunch like a prince, and dinner like a pauper." Or "Breakfast is the most important meal of the day." However, that is the meal people frequently skip.

It has changed the way I think about meal times. The kids aren't eating any less by doing this than they were when they just picked at the meals I used to fix, and they're eating a heck of a lot healthier than they would be if we were eating out as much as we used to!
