It's Soup-er Saturday again, and I created a pretty tasty one this time. I made my version of an Italian Meatball Soup, and used some of the meatballs I made, earlier in the week, as well as some hot Italian turkey sausage, and an array of fresh veggies. As said, it turned out pretty good.

Tomorrow's another Frittata Friday, and I had every intention of making another Za! Frittata! I mean it was so good, last week, that it's definitely worth an encore appearance on my menu. However, tomorrow is St. Patrick's Day, so instead I'll be making a Corned Beef and Cabbage frittata with a German style Butterkase, (butter cheese), and a sharp Irish cheese, that I bought last week at Sam's Club, which is absolutely delicious. This one's going to be good! :-)

No change from last week, but with the drops I've had over the past 5 weeks, it's not really a surprise. However, I will stay focused, and hope to see a drop in the coming weeks. :-)

I enjoy experimenting with recipes, so today I'm making some experimental meatballs. They are chock full of ingredients that should make them very tasty, and being as low in carbs, as they are, they were dreamed up as a snack. I've included extra lean ground sirloin, barbecue pork rinds, parmesan cheese crisps, basil pesto, garlic, Italian seasoning, black pepper, and an egg. I'm baking these, and though I can't remember the last time I actually made meatballs, I'm hoping this recipe works; if not then back to the drawing board. :-)

As I got kinda busy, Soup-er Saturday turned into Soup-er Sunday. I didn't have the chance to make my soup, yesterday, so I made it today. I made my version of Chicken Zoodle Soup, and it's pretty tasty if I do say so myself.
