I have a sensitivity to carbs....just looking at one makes me gain weight! I love to cook, love to bake (mostly desserts) and find myself turning right to the dessert section in any new cookbook that I get. This week I pulled out my languishing bread machine and made two loaves of low carb bread...I changed around the ingredients to suit what I had on hand and the results weren't too shabby. I think I have to be careful of the calories because low carb doesn't necessarily translate into low fat or low calorie. One loaf of bread called for 4 tablespoons of butter or oil (yikes!). I subbed 1 tablespoon of oil and 3 tablespoons of Lighter Bake...the results were pretty good. A very dense loaf with good fats from the almond meal and garbanzo bean flour. I must remember to cut those slices thin however!

Had a wonderful weekend with visiting family. Went to OUTBACK for dinner. I tried to be extra careful, but there is nothing really healthy on the menu! Opted for the small Ahi Tuna with only a slight amount of dressing, the roasted filet sandwich...no cheese and no mayo, just the au ju dip and 1/2 the bread...didn't even touch the Chocolate Thunder from Downunder that was put on the table (boy that was sooo hard!). I did have some of the honey wheat bread and a touch of butter (I just love bread!). All in all I think I did ok. Did get to the gym this morning for an hour and walked around the outlets for 3 hours window shopping. I still wish I could get thos 5lbs off that just don't seem to want to go away!!

I don't know if it's my metabolism or what but over the last 4 months I have put on 7-8lbs and I can't seem to figure out why. I journal my food most days, measure everything, increased my exercise...it must be the carbs...I find if I overdo one day with carbs the scale shows an increase in pounds that never seems to leave...I consiously know it's not fat probably retained fluids but I can't seem to get that weight gone...this is so majorly frustrating. My doctor said that as long as my clothes still fit there is nothing to worry about, but I can feel the extra weight...this is driving me crazy

It's snowingagain today...another 18 inches on top of the 24 we had on Saturday...I am so frustrted with this aweful winter weather. All I want to do is eat bread, mac and cheese and cake...good old fashioned comfort food! Instead..I made chicken soup, low-fat cramberry muffins and I'm trying not to graze being stuck in the house! When is spring ever going to get here!!!!

I watched a show on cable following up on people who has gastric bypass...one woman's story really hit home for me...she said that the scale is now her enemy...her whole life depends on the number that she sees on that scale in the morning...it rules what she eats, how much she eats, if she can have anything extra...she's gone a whle day without eating because of the number on the scale...her big fear is that she will gain 5lbs...her biggest fear is that she will be back at 240lbs (her starting weight). I'm not as bad as that but I do find that my day is colored by what I see on the scale in the morning. I haven't gone a whole day without eating, but my mood and how I see myself is mirrored in that daily numbered. I try and put it all in perspective but it's hard...all my success and possible failure are based on those numbers. I can see excusing a 5lbs weight gain as just a fluctuation in body weight...then it's 6lbs, then 10...before I know it it's back in size 32 pants...how real is that fear??
