Counting calories. I've done everything but that!

I followed an exercise plan daily for 3 months and did not loose more than 3 lbs. total, but I lost 11 inches. My result was more muscle, less fat. Now that I don't workout every day, some of the fat is back and I can't seem to get rid of it. I'm pooped out! A daily workout seems more than I can achieve right now. I would like to think 3 or 4 workouts a week, along with my treadmill and tennis might be enough, provided I'm eating healthy.

I've changed my diet to fresh food, not processed. Lean meats, fish and fresh vegetables and fruit and nuts for snacks. I eat Pita bread instead of regular bread, olive oil butter instead of margarine/real, steel cut oats with blueberries or cinnamon and a sprinkle of splenda. I drink tea all day long and into the night. Caffeinated in the am, decaf in the pm. On some occasions I throw in a protein drink after a particularly grueling workout.

With all of these changes, I would have hoped to see my returned fat recede, but that's not the case.

I feel so defeated. That kind of feeling that says, why bother? Time to eat the cupcakes and pizza. But then I watched the Biggest Loser and saw that Koli wasn't counting calories and the light went off that I wasn't either. Without tracking what goes in my face, I won't really know how to make an adjustment. So, here I am.
