All of your responses were SO kind and sweet that I think I am going to stick around. I have missed sharing the love and support, my culinary knowledge and learning so much from so many of you. Thank you to all...lets let's get cooking!

Steamer clams are high in protein, earthy and briny, drizzled with lemon and dredged in melted butter, they are a Ketolicious! So easy to prepare. An inch or two of water in a 6 qt.+ soup pot. Bring to a boil and toss in a stalk of celery, (a restaurant trick I learned...even MORE delicious, some slices of FENNEL...heavenly!) Toss in the clams and steam until they all open up, 5-10 minutes. Serve with lemon, melted butter and a cup of the broth to rinse the clams if you get a sandy batch!

NOTE: I freeze the left over broth for when I make clam chowder.

I made 2- 8 inch crustless quiches the other morning BEFORE leaving for work...(I have no idea where I got the energy, since I am working 2 jobs now!) Ham & swiss and roasted tomato & parmesan.

5 eggs each with 1/2 cup+ heavy cream.Place your fillings in your quiche pan.
Pour your egg mixture over your fillings. You can add a generic seasoning mix if you care to, ie: Mrs. Dash, All Seasons, etc.

For the roasted tomatoes: Take ripe tomatoes, any kind, slicing them in slices or wedges into a bowl. Toss them GENTLY with a generous DRIZZLE of olive oil and salt and pepper. You may also add Italian herbs, crushed fennel, garlic or onion powder or granules. Follow your tastebuds! Anyway, scoop them out with a slotted spoon and place them on to a cookie sheet. Place the cookie sheet into a preheated oven at around 250-275 degrees and leave them in their for several hours, checking on them occasionally. You may have to turn them. These are DELICIOUS on a grilled Caesar salad, with left overs for this quiche! Practically carb-free.

The last photo is a simple grilled steak with a garlic compound butter and a field-greens salad with the last of the Jersey tomatoes. (We have a U-pick farm near here that I like to go to and get a bit muddy picking fresh veggies. I am going tomorrow morning early to pick some of the last of this years crop of Jersey tomatoes.) If you've never had Jersey produce you don't know what you're missing. Something about the sandy soil and salty air...our peaches, corn and tomatoes are some of the best in the country. Happy(healthy)Cooking and Bon Appetit to all!

I haven't been here for awhile. I left because I kept getting into these ridiculous heated discussions with 2 people on this sight about Keto-style eating, Intermittent Fasting as opposed to CICO. They both became very insulting and aggressive and I had had enough. I closed my account, changed my handle and reopened with this one. However, I asked FatSecret to look into the behavior of these 2 people with no result. So I left.

I am here with a footnote. One of these people, I don't remember his name completely but it was Carlos...with some numbers, etc; was very aggressive in sighting CICO as the ONLY WAY anyone loses weight of any kind. He would often sight the research done by ALAN ARAGON, a fitness personality and at the time, a proponent of CICO: Calories In Calories Out. I researched him and was not impressed. Same old same old self-promotion to generate client business or promote some type of nutrition products.

Well, ALAN ARAGON now joins the disgraceful club of men legitimately accused of multiple occurrences of sexual harassment or assault. He used his notoriety in the fitness industry to prey on young women attending fitness conferences. He has since been BANNED from attending/participating in most, if not all, of these conferences.

Justice, Carlos. I'm out.

PS: Posting my last photo here. I was hoping to share my culinary expertise here with photos and recipes. My enthusiasm for this sight has diminished. I am not sure I will be back, but I wish you all great success is your quests for weightloss and improved health and happiness.

I don't usually post stories but I'm going to today.

I'm at work in a city hospital in NJ. I was in an elevator with several people and an older couple entered. It was obvious immediately that the woman in this couple was either agitated or simply unpleasant. There was some small talk among some of people in the elevator. Suddenly this woman blurts out-"This place is a pain the ass to get to." of which she repeated. Well, nobody needs to hear that. There are plenty of things in the world to complain about. The fact that you have been inconvenienced when you are attempting to visit someone in the hospital is not one of them. It's a first world problem. She looked square at me, seeing my badge, waiting for validation of her misery. I looked square back at her and said, "Well, getting around is part of life. We all have to do it." She squawked in my face, "WELL, I AM 76!" I answered her with, "I'm 63. like I said, it's part of life." at that point the elevator arrived at their floor and they got off. As a doctor got on and the elevator doors began to close, I saw this woman look at the elevator and say, "YOU SHOULD GO ON A DIET!" Fortunately for my job security, the doors closed before I could jump out and sock her square in the nose, the old bitch.

None of us here want to be FAT. Most of us are trying hard, some of us are just trying. All effort is good effort. Here's the thing: Most of the time we suffer in silence. That's why we come to a place like this, where once in awhile we can share our pain, discouragement, shame, hopelessness and often, success. None of us needs ANYONE to tell us we're FAT. We see it in the mirror everyday, on the scale every morning. Most of us remember when we were younger and stronger, happy and confident. It never ceases to amaze me the capacity of people to mean to one another...even to a complete stranger.

I wanted to send that woman downstairs to the Emergency Room with a broken nose.
But I didn't.

I'll probably never see her again. But success is a better revenge.
