Well I'm almost at the end of my 2nd week and I'm finding it easier to get things prepped for my specific needs. I need 'to-go' breakfasts and 'no prep' lunches. This site is FANTABULOUS!! I made those egg & sausage muffins for beakfast and they were TASTY! Although I'm going to play fast & loose with the recipe next time I make them. I'm gonna use ground pork instead os sausage. Infinitely less grease! YUCK! And I'll make other changes.
Even though this is 'officially' the end of the induction phase my friends & I are going to continue on for another two weeks and then continue on to the next phase. And so the fun continues!

This day sucks! The vertigo is viral so I'll probably have deal with it for another freakin' week! To top things off my daughter is running a high fever and I can't stay home with her. The dishes are dirty and there's no room to make dinner. I have little to no counter space. What I really need is some help and my tax refund will help... at least with the dishes...lol...
To make matters worse... since there was no room to make dinner & I was/am exhausted I ordered pizza. I didn't eat any pizza, but I did have the chicken bites that some with it. They're chunks of breast meat but they are breaded and deep fried. Oh well one slip is not gonna derail me. I start fresh on the next meal.

So far so good! However, the vertigo is making it difficult for me to get into the kitchen and wield my knife! LOL!! But seriously, it's kinds scary getting a bad dizzy spell when your cooking over a hot oven or chopping veggies.
One of my Atkins buddies has agreed to do an additional 2 weeks of the induction phase. I've warned the kids & co-workers...lol. Wish me luck, 'cuz my first goal is Onederland!!

Today was fun... *sniff, sniff* I was all by nyself at work today. None of my diet buddies were in today :o( LOL!! Actually I was bad today. I had a caffinated coffe with cinnamon and 3 tsp of half & half. The funny thing is I'm allowed more cream!! LOL!! Not that my body tolerated it very well. Lactose intolerance strikes again!
The cinnamon and the caffine are frowned upon... a couple of my favorite things...
The vertigo is killer! I'd like to take a walk but everytime I move my head I walk like a drunk... grrrr....

It's been another fun filled day! I finally got a call from my doctor's office about my bllod tests. Turns out my Thyroid levels are really, which explains the sluggish weight loss and the extreme fatigue. Shouldn't surprise me though considering my levels have been fluctuating for the past few years. In the next couple of days I'll be on the new perscription and hopefully kick this weight loss in high gear.
The only drawback I'm having to this low-carb diet is the headache and all the prep time involved. As a single parent of two children time is not something I have. But with the help of my diet buddies at work who are all on the same diet.
