Ingredients:
1/2 Cups rice
1 bunch baby bok choy (i didnt have any so i added: 3 1/2 total cups of (4) mushrooms, Zuchinni, 2 sticks of cellery.)
2 teaspoons peanut, or veggi iol. I used olive oil.
1 small red onion halved and thinly sliced
1 red pepper cut into thin strips
1/2 lb mushrooms, sliced (i didnt end up using this as i had put in mushrooms already)
2 garlic cloves, crushed
2 teaspoons ginger, grated
1 teaspoon red chilli, chopped
1 tablespoon low sodium soy sauce.

Instructions:
1.) bring 2 1/4 cups of water to a boil in a large, sightly covered pot/ saucepan. stir in the rice and quickly replace the lid. Reduce the heat to low and cook for 10 minutes. remove from heat and let stand, still covered, for five minutes.
2.) Meanwhile, cut the boc choy in half to separate the leaves from the stems. Cut the leaves into wide shreads and finely slice the stems.
3.) Heat the oil in a wok and add the onion. stir-fri over medium-high heat for 2 minutes, until just tender. add the pepper, and bok choy and stir-fry for 3 minutes.
4.) Add the mushrooms, garlic, ginger, and chili, and stir-fry for 3 minutes, until the mushrooms are just soft. Drizzle with soy sauce and toss to combine. Serve immediately with rice.
