Last night's dinner was delicious. The spinach salad had red and orange bell peppers in it along with black olives, fresh mushrooms, and croutons. The dressing was a warm bacon vinigrette. We stuffed the chicken breasts with a slice of swiss cheese and wilted fresh spinach, then breaded it with mayo (instead of egg) and panko bread crumbs with coconut and pepper. They turned out wonderfully.
