So, I come back from Vegas with less money and more pounds; c'est la vie! I had a marvelous time. We went hiking at Valley of Fire State Park, where I took great pictures; I'll post one of them of me when I get the pictures on the computer. So much beauty packed into that one day!

We drove back on the Lake Mead route instead of the freeway, and stopped at Rogers Spring, an amazing oasis in the desert. There was even a turtle and lots of fish in the pond there.

One evening we went to see Mystere, a Cirque du Soleil show at TI. We earned those tickets by enduring a lengthy time share presentation that was hellish, but it was worth it! I literally sat with my mouth open in amazement at much of the show; the beauty, musicality, athleticism, the artistry; wow.

We ate at the M Resort & Casino's Buffet, which is one of, if not the best buffet in the Vegas area. I took delightful pictures of my meal, but there was no way I could record it in my food journal. A few days turned out that way, lol.

There is this awesome deli in Henderson by the Trader Joe's we get groceries at. I got a BBQ grilled chicken sandwich with grilled onions, and a side salad, dressing on the side. There was a full chicken breast on that sandwich, with a bun sized to match, as well as melted cheese. I could only eat half....Then we stopped at the bakery on the other side of Trader Joe's, that has theses sinful cookies....

Another day we visited Ethel M's Chocolate Factory, where we saw them making their deadly delicious pecan brittle; I KNEW there was a ton of butter in that stuff. I have pictures, lol. I also have the memory of the chocolates I ate from there... worth every calorie.

South Point Casino is right across the street from where we stay; among many many other things, they have and ice cream shop with irresistible flavors...

I had a blast playing penny machines, love Gold Fish & the newer ones where the seats vibrate with sound (speakers in the headrest); I didn't lose money; I paid for entertainment, hahaha!

I went to two Zumba classes at a 24 Hour Fitness near where we were staying, had a blast. Swam in two of the pools on the property, walked miles through casinos, and did the hiking. I didn't burn enough calories to compensate from what I consumed, but I pretty much expected to gain weight, so I'm not unhappy at all.

I returned home on Sunday, went to Zumba on Tuesday, it was cool. Yesterday I went to Zumba with Gina Grant, which was an incredible high flying wonderful party, woo hoo!

Until 50 minutes into class when I danced to the left and tore the lateral meniscus in my left knee. I limped through the last 10 minutes after recovering from the worst of the blinding pain. I then drove over to my physical therapist's office & was able to get in to see her a couple hours later.

She assessed my knee and came to the conclusion that my meniscus was torn and my ACL is iffy. I'm resting and icing, doing gentle stretches, taking a conservative approach to start with. When the swelling is under control, I'll slowly return to some exercise (hmmm, maybe Silver Sneakers), and see how my knee does. If it just doesn't get better, I'll have to go for an MRI to see the extent of the damage.

Last night I had a fit of emotional eating, just went with it to get it out of my system.

Now I'm back on track, though with all this free time I'm baking two kinds of bread today. Whole grain green chili corn bread with reduced fat cheddar, and Whole wheat apricot pecan bread. Both are healthy recipes that I entered in my cookbook so I can record what I eat.

That's more than enough for now! It's time to go get my ice pack, check in with you later.....

It's great to have you back, Kat. Glad to hear about the adventures of your vaca, but upset to learn of the injury. I will keep you in my thoughts and prayers. Hoping you recover soon.
