🌱🌿Celery Salad🌿🌱
With honeycrisp apples🍎 and Tofurky slow roasted protein. The dressing is fresh key lime juice, pepper, olive oil, and salt. So refreshing and crunchy

I am eating more tofu (you have inspired me) and am really liking it. This meal is right up my alley. I have never tried tofurky but think I will add it to my shopping list. Up till now, I have always added tofu, eggplant and zuccini to my spaghetti sauce with just a small amount of hamburger. I always make my own— the sodium content of the commercial product is rediculous.

Kenna, the Beyond Meat brand would be right up your alley. Its a fabulous brand made from pea protein. No wheat gluten or soy. Its pretty darn convincing too. I love their burger crumbles and grilled chicken strips. Not sure about sodium in them, but I never salt anything, so I guess its all about balance. My favorite tofu recipe recently has been just mashing it up with sirracha sauce and making it a filling for celery and sushi. "Spicy tofu". Its pretty tasty and super low fat and calories, but packed with protein.

I use beyond beef crumbles for an awesome vegetarian chilli. I even put on my tomato sauce for spaghetti.
