Mediterranean spice, parsley &white onion quick pan-fried grass-fed beef meatballs over organic kale cooked in garlic & olive oil.

Soooo good for my keto diet! I will copy. And thank you for always labeling your photos with exactly what is on that plate. It drives me crazy to see food pics and have no idea what it is.

Wish I had patience (and cleanup bandwidth) to make pan-fried meatballs! Those look soooooo good.

Glen- here is what I do- start with a lidded pan big enough to hold one bunch of kale with a little room for tossing. Rinse off the kale & just shake it off - a little water is good. Quickly cut into strips. Put 1 or 2 T of ex Virgo olive oil and 1-3 cloves of chopped garlic in a medium heat pan - let it sizzle 30 seconds and throw in the kale. Turn it a few times- just saute if you want it very crunchy, put the cover on low heat for 2 minutes if you want it a little less crunchy, or throw in a splash of filtered water, put the lid on for desired time (3-5 min etc) to desired softness it will steam under the lid. That's it!

revvit- you are welcome! The whole reason I share is in case it's helpful--because it can be perplexing in the beginning what exactly to make on keto when we are so used to seeing rice, bread and pasta for so long. Just FYI- I used 3/4 lb grass fed beef and added one raw egg with the onion and spices. I skipped any kind of breadcrumb substitute and they are great without. They mix up and fry up very quickly. The kale is a great base for certain things we used to eat with rice, pasta etc. Cheers!

Perks- I try to make as much regular day to day food without nut flours as possible - I use them sparingly and only when there is no alternative- they slow down my progress considerably. Better for maintenance. The more I stick to protein and veggies and exercise- the faster I lose on Keto. The omega 3/6 balance issue with almond flour is yet another reason I use nuts sparingly.

That looks delish. I still can`t convince myself to kale, maybe I should steam it for longer (it`s hard). Or, maybe try to fry it in butter.

Mal- have you bought a fresh bunch of it at a more upscale produce department? For example, all the kale I have bought at Safeway has been strange- can't compare to the kale from Whole Foods and the farmer's market. Its very bitter tasting at the regular mainstream grocery stores and the stuff in the bags/ pre-washed also tastes inedible to me. I should have mentioned that at some point I guess.
