The tofu shirataki noodles were actually a pretty decent substitue for spaghetti noodles. Yawm!
Now let's see if it slows down my afterwork trail run today. Today should be a good challenge as it's the hottest day of the current heatwave... and there's quite a bit of wind added on top of that.
So.... BRING IT ON!!!!!!!!!!!

Tanks. Funny you mention that, I made my first mashed cauliflower for lunch today (very tasty!) to go along with my swedish meatballs with flatbread "flat noodles". But, I definitely need a food processer. The run drained me. I had to dig down really deep to finish the last 20 minutes, but I accomplished my goal. hoorah!

I miss rice. I'll try the riced cauliflower next! Yea, I can definitely feel the difference with hier sugar/carb foods. Slows me down and makes me want to take a nap!

Np, buddy! It's all about eating tasty foods that are good for the bod... even if it takes a little more preparation to eat healthier while still having great tasting eats :)
