All day I think about healthier ways to eat the foods I love. Figuring out how to eat better using alternatives for my fave dishes has become quite fun. I just had success with a low carb mac-n-cheese. LOVE IT.

All day I think about hitting up trails for a run or a bike ride or pumping out a weight resistance session. LOVE IT.

I'm in the effin zone. The real challenge is to keep the good habits without falling off like I did in December and January after having the best physical fitness results I've ever had.

I want it too! Post it! You're right though, it's SO hard to stick with the good habits and not just get lazy and eat crap... Eventually we'll get there.. ;)

Skinnytaste.com has a Baked Spaghetti Squash and Cheese, Dreamy "Mac & Cheese" Spaghetti Squash (Single Serving) on Joandsue.blog... there are lots of recipes and you have me thinking now! After I get though all the veggies I bought this is next!

I've definitely got to experiment more with spaghetti squash! Here's my low carb version of my mac-n-cheese. ingredients: 1. la tortilla low carb high fiber tortillas x 2 2. Whipped butter x 1/2 cup 3. Lucerne mac-n-cheese shredded cheese x 1 cup 4. Pork Rinds x 1oz 5. Italian seasoning and garlic powder to taste Cut tortillas into strips and boil. Pulverize pork rinds to resemble breadcrumbs and mix in seasoning. Put cooked tortilla strips into an oven safe dish. Mix in cheese and butter. Sprinkle pork rind/seasoning on top. Place in oven for 20 minutes. Remove, let cool, and enjoy! That's it in it's basic form. The way to keep it low carb is just finding a suitable substitute for that yummy elbow macaroni. Sure, it's not the real thing, but it sure satisfied my mac-n-cheese craving!
