I survived my trip to Costco. I really wanted 2 chickens (they're the size of little turkeys). 1/2 for dinner (plus all the legs for the son), 1/2 of one for my mom, and one to chop up for chicken salad. Turns out I left my card at home with my receipt from last time and had to get the print out. I did pretty good, I didn't sample anything except the babybel cheese and salad (with Olive Garden dressing 2 carbs p/serving), none of the bread or carb laden ones. Yay, victory! I ran in for 4 things and only walked out with 5, not too bad. I cook a low carb main dish (or microwave depending on the night. :) ) and do the sides different. Usually roasted brussel sprouts with bacon for me made twice an week and portioned out. The hubby and son still get potatoes and veggies I don't like. Microwave mashed potatoes are awesome. I found as long as the main dish is the same, no biggie. When I make pizza for them I grab a low carb pizza for me or something I already prepped for those nights.
I made the chicken salad, same base chicken, seasoning, celery, and mayo for both and then separated them to add light carrots to mine and some extra mayo. Hubby's got extra carrots and onions. I just don't like onions all that much.
I'm heading to off to sleep early tonight. Last night I didn't sleep well and got maybe 4 hours total.

You are way ahead of the game doing your prep work like that. I made a HUGE tuna salad today and will have that for lunches and snacks. I had boiled up quite a few eggs for it earlier.
