While at the store I came upon this pasta made from 100% red lentils only. I thought I would give it a try in my version of a creamy tuna pasta. Used some dairy free cheese, but it wasn’t melty. This cheese would be great for lasagna though.

Ooo the Trader Joe’s lentil pasta!? So good, try with olive oil, roasted red peppers, and a dash of pesto (maybe throw in some broccoli) 👍

Daiya nondairy cheese melts good for future reference. I can't eat regular cheese so I'm always looking for something that is sumular to regular cheese. My daughter introduced me to Wayfair brand nondairy nacho cheese. It is sooo good in my opinion. She got it at the health food store.
