Breakfast today. A recipe from the book by Maria Emmerich. But my fiancé hates onions and I hate mushrooms (the recipe called for both). So I substituted marinated artichokes and chopped green bell pepper. I was worried it would be awful, but it was great! I will make this again for sure (maybe doubling the egg in it, since it only called for 1 egg for this 2 servings dish.

Oh, and it looks kind of ugly, lol...but it's really good. You cook it up in a pan so that it appears to look like a giant pancake, and then flip it. I'm not good at flipping it and keeping it in a nice round form. Plus I had already started eating it, and then said, OH! I have to take a photo, LOLOL (my fiancé loved it too, and said it was a keeper)
