Since today is my first day "back" on a diet so far it's really been tough. After months and months of having a free for all attitude of eating.... to all of a sudden be so restricted I have to have a whole new mind set. It seems like the first 3 or 4 days are always the toughest, at least for me anyway. The hardest thing up til now is I am craving something sweet so bad and I know it is just a habit, but when I was going through some of the recipes for low carb ideas I came across a single serving pumpkin pie one (without a crust of course)and since I had everything on hand to make it I did. The only thing I changed is instead of one pack of Splenda I put in two and wow, with some zero carb whipped cream on top it saved me and was sooooo good. I might even try a bit of brown sugar Splenda the next time, I've used that on top of my oatmeal in the past, it's very dense and sweet so you don't need much. I haven't gone all through the recipes yet but with them I think I can do this!
