I hope I can keep cooking main meals low carb and serving the hubby and son stuff like rice or mashed potatoes on the side. It is so much easier to cook the same meal for everyone. Making them rice is super easy (rice steamer) or nuking mashies. Veggies are a little different, hubby won't eat most veggies I like and can eat. He prefers peas, corn (I don't even consider this a veggie in my house), and other high carbs ones. Thankfully they sell frozen ones I can prep for him while I cook mine.

I am doing the same thing, cooking rice, potatoes or pasta on the side for my husband. It doesnt even bother me. I have no desire for carbs after being on Atkins for 3 months. Good luck on your journey.
