mmm yumyum, tonight i made my creamy chicken fettuccine recipe( sans pasta) and thinly sliced eggplant into fettuccine sized strips and baked them till they were 'floppy' and they were my substitute fettuccine. Oh My GOD!!! so good!!!!!
