Making the break!

Well, I knew it would be a slow process, this breaking from the same 'ole, same 'ole and moving along into a Vegan, whole food world.

It's wonderful! I'm learning about and cooking with more kinds of foods and spices than I ever really knew existed. The foods of my past now seem a bit bland and pasty compared to the robust blended wild, black and ebony rices, aduki beans, seaweeds like Kombu, grains other than wheat, and legumes to add just the right amount of 'ahhhh' into a meal. Salads pop with new ingredients and flavorful dressings using fruit juices, balsamic and little (and frequently NO) oils.

But these yummies are not fat-free. {:-0}

With the exception of quitting smoking, breaking from dairy is proving to be the most difficult thing to do. I've tried various nut milks and they are okay. I'm not working with Hemp milk. It offers just the right blend of "nuttiness" (although it is a seed, right?) and goes well enough with my coffee. It's really rough having all these options to replace milk. I can have Rice or Almond milk with my cereal (for the lighter, sweeter taste) and Hemp milk with my coffee (less sweet and complements rather than competes with the body of the coffee or espresso.) Although they are cholesterol-free (and my cholesterol is a little high right now), they are also not fat free. :(

And then there is cheese. (sigh) Haven't given that up yet.

BUT -- I'm feeling more energetic (part weather, part what goes in, comes out) so I can exercise more!

Net results: Gained (back) 2 pounds but all my liver numbers except the M2(AMA) are good! And, in an interested note, my AMA went from 48.6 to 47.8 in two weeks. No ever mentions that AMA can go up or down. This could be very interesting.
