What is a cheese shell? Do you buy it or make it?

To make the cheese shell, I just spray a pan over medium heat with EVOO, add 2 oz organic Mexican style cheese and let it “firm up” then flip it over to let it harden a little more. Some people drape theirs over a wooden spoon suspended between two cans to shape it in to a taco shell...but I either bend it myself or eat it chalupa style as pictured.
