Thank you Meghan! I made cauliflower rice first time ever yesterday, as I was a bit sceptical about it. It turned out that I love it! I just put it in the oven under the grill without any oil. What I like is that this way it has no strong flavour - as compared to when cauliflower is boiled in water.

Does it really??? That is genuinely been the only thing putting me off is the overpowering cauliflower taste 😂 thank you for the tip I'm gonna have to try this cause it's so light as well cannot complain ☺️

Yes. No cauliflower taste at all. I only put the shreded cauliflower in an ovenproof dish. No oil, no water, no salt, nothing. I think water brings out its taste. I had it in the oven for about 30 minutes, stirring it twice or so. I left it half crunchy which also means half raw I think. :-) I had only put salt on it before serving.
