I had white navy beans, cucumber, tomato, basil, and red onion, but use any veggies or herbs you like. Chop them up in similar sized pieces, mince the herbs, and toss together in olive oil and high quality ACV (I enjoy Braggs). I used two cups of beans, enough veggies to get the ratio I wanted, 1/4 c vinegar and slightly more oil than that, to taste. Season with sea salt and black pepper. Make sure you soak your beans overnight and boil them as long as it takes! Usually 2+ hours. I generally make my beans ahead a couple days. Enjoy!

Bonus: this salad gets better the longer I sits and packs excellently in coolers for camping or picnics.
