It's cold, wet, and rainy. The high today is only 70°. Way to cold for Florida. Right now it's 67°. Yuck! I did weigh myself this morning but I'm not recording it. It went up to 250 even. It should drop tomorrow or I will record it. I did binge last night on a bag of crisps (low carb cheese crisps). IF today, only bpc coffee so far. Vitamins are next and a late lunch later today and whatever I make for dinner. I may make my Zuppa Toscana since I ate the last of my frozen ones last night. Having them in the freezer has been such a saver for me. Plus a ton of veggies in my serving (cauliflower and kale/spinach)

Dang........ya know......it sure seems that way. A year ago, I was bigger, now the same people look HUGE to me. So...I like that.......sure makes me smile thinking about it!!!!

I can't imagine thinking that 70 degrees is cold. Ha Ha! I can't wait to be in the 70's again! Did you have a Zuppa Toscana recipe to share? I love the one I had at the Olive Garden. I was thinking of making a soup today.

I used a copycat recipe for Olive Garden's and replaced the potatoes with cauliflower since I'm lchf.

www.food.com has the recipe. look up Olive Garden Low Carb Zuppa Toscana Soup. Add a pound of radishes cut in eighths for a dash of color and extra flavor. Do not add salt or pepper until you have tasted as the bacon and sausage contribute a lot. You can avoid the water and boullion by using broth. And lastly, reducing the heavy cream and replacing part with cream cheese thickens it a bit. example 1 cup HWC, 4 oz cream cheese ENJOY!!!
