After the open heart surgery, my doctor had me eating gluten free. Since I am pre-diabetic, it has been hard to get my head around both low carb and gluten free. I have gone back to what worked for me in the past...Atkins, but trying more recipes for Paleo too.
I have found that no matter what the diabetic teachers tell me, some foods raise my blood sugars more than they do other people's. I can not handle as many grams of carbs as others.
Always about finding the proper tools to come up with another solution!

Low carb is pretty naturally gluten free. I have to stay under 25 grams of carbs or it boings me right out of ketosis. Still, it's an improvement over 5 months ago. Gradually healing insulin resistance, I'm able to tolerate 5 grams more than when I began.

You are all terrific! Thank you for your input. I will look up the Doctor and his book. I hear what you are saying about the lower carbs. I just can't tolerate the higher. I am not complaining, I feel so much better when I do it right.
